From sunrise to sunset, skilled jimadors harvest fully ripened agave, which takes six to nine years to reach peak maturity. These agave piñas are cooked in traditional hornos (ovens), then crushed using a two-ton volcanic tahona stone to unlock the essence of the agave’s natural sweetness.
