Crafted using the traditional saignée method, this rosé is the product of careful hand-selection from the Farr Rising Pinot Noir fruit. After just two to three hours of skin contact, the free-run juice is bled off, producing a rosé with perfect colour and a concentration of the remaining Pinot Noir ferment. The wine is barrel-fermented using wild yeasts at cool temperatures, and undergoes full malolactic fermentation to create a deeper, richer profile than your average rosé. Aged for 10 months in four- and five-year-old barrels, it emerges as a structured, dry wine with a lovely savoury edge and a long, crisp finish. While perfect to enjoy now, it has the depth and complexity to age gracefully for years to come.
