Domaine Paul Pillot Bourgogne Blanc Chardonnay 2017

The fruit for the Domaine Paul Pillot Bourgogne Blanc Chardonnay 2017 vintage comes from a 0.6-hectare parcel on a northeast-facing hillside just south of Chassagne-Montrachet. The vines from this parcel are now 20-30 years in age. The fruit is handpicked, pressed, then left to settle, and finally naturally fermented on lees for 12 months. 

This white Burgundy is fleshy textured and wonderfully layered. There are notes of brown spices, grapefruit, and white peach, with a chalky freshness running through the length of the palate.
