All Dom Pérignon is aged for at least eight years before release. But each year, a tiny amount of wine is held back for even longer ageing. This additional time spent in the cellars yields a complex, deep and concentrated champagne called Plénitude 2, the second life of Dom Pérignon. This second release of the 2004 vintage is similar in character and structure to the first, which was released in 2013, but is magnified in almost every respect. It's wider, deeper, longer and more intense. Arriving after a year marked by dramatic frosts and a historic heatwave, 2004 stood out as a year of renaissance and calm in the vineyards. Even though August was a bit cool, the few weeks of dry heat that followed really shaped the vintage. The vines thrived, expressing themselves to the full with a generous harvest of excellent, ripe grapes.

      Dom Pérignon

All creative processes have their constraints. Dom Pérignon's constraint is the Vintage: Dom Pérignon can only be produced from the harvest of a single year. Dom Pérignon's ambition is to bear witness to each year, whatever the challenges may be. Dom Pierre Pérignon dares to put itself on the line, to take risks, to go as far as accepting that it will not declare the vintage. Dom Pérignon's creative legacy is this reinvention of its work with each vintage. Dom Pérignon Vintage is the culmination of the elaboration and creative processes. It embodies the vision. Dom Pérignon Vintage expresses itself fully in its three dimensions: The year: the character of the seasons The Plénitudes: evolution by successive windows of expression on the way of the long maturation on lees. The colour: White or Rosé. These three dimensions are inseparable, and no combination is quite like any other. Each has its own space and time. As such, Dom Pérignon can only be the sum total of all past Vintages, and those yet to come.

      Tasting notes

      NOSE
      Citrus, Minerality, Honey

Fruit aromas remain discreet with this second release of the vintage, yet they are more clearly defined with citrusy notes of pink grapefruit and blood oranges gently giving way to figs. The additional time on lees elevates the minerality with a sublime maturity that is typical of Dom Pérignon. Cocoa, mocha, roasted nuts, brioche and honey follow.

      PALATE
      Balanced, Intriguing, Creamy

Balanced and intriguing, showcasing a surprising tension between immediacy and weightlessness. The initial flavours are citrusy and bright, with hints of grapefruit and blood orange. However, these notes evolve to reveal a richness of cocoa, mocha, and roasted nuts. The wine's texture is silky and creamy, highlighting the influence of the lees aging.

      FINISH
      Persistent, Liquorice, Complex

Long and persistent, with a lingering touch of liquorice and sapidity. The interplay between citrus and toasty notes creates a delightful and complex finish.
