The fruit is sourced from the cool Adelaide Hills region, where elevation and a long growing season help preserve freshness and aromatic lift. Shaw + Smith own vineyards at Balhannah and Lenswood, planted to varieties including Sauvignon Blanc, Chardonnay, Pinot Noir and Shiraz. \u003cbr\u003e\u003cbr\u003eThe 2023 Shiraz was hand picked, sorted and fermented using a combination of whole berries and whole bunches in open fermenters. Gentle plunging and minimal working were used to preserve aromatics and freshness. The wine was matured in French oak for fourteen months, with one third of the oak new. Medium bodied in style, it reflects Shaw + Smith’s focus on balance rather than power. The palate is shaped by cool-climate brightness, fine tannin structure and measured fruit intensity.
