The 2024–25 growing season progressed steadily, with a mild summer and no prolonged heat events, allowing the Chardonnay to ripen evenly while retaining freshness and balance. The fruit was harvested on a median date of 11 March 2025 at an average ripeness of 13.2° Baumé and a yield of 6.37 tonnes per hectare. All grapes were picked by hand, sorted at the winery and whole-bunch pressed to preserve purity and minimise excessive extraction. The clarified juice commenced fermentation in temperature-controlled stainless-steel tanks using several selected yeast strains.\u003c\/p\u003e\n\u003cp\u003eMidway through fermentation, the wine was transferred to 228-litre French oak barriques, of which 32% were new, to complete both alcoholic and malolactic fermentation. It remained in barrel for approximately nine months before being racked, blended, stabilised and bottled in January 2026. The resulting wine combines ripe stone fruit and citrus with subtle floral, pastry, nougat and oak-derived characters. Fine phenolics and fresh acidity provide definition through the medium-to-full-bodied palate, balancing the wine’s generous fruit and creamy texture. Although attractive in its youth, the wine possesses the structure required for extended development, with Moss Wood recommending at least ten years of bottle maturation and potential evolution beyond twenty years.
