Liam Quaile from the Cradle Coast created this delicous skinsky Gris by pouring already fermenting Pinot Grist juice onto freshly de-stemmed tubs of Pinot Gris berries, and stirred them up twice a day. Once dry, he pressed and aged them in neutral oak barrels.
