Schubert joined Penfolds as a messenger boy in 1931 and by 1948, he became Penfolds' first Chief Winemaker. In the latter part of 1950, Schubert was sent to Europe to investigate winemaking practices in Spain and Portugal. On a side trip to Bordeaux, Schubert was inspired and impressed by the French cellared-style wines and dreamed of making 'something different and lasting' of his own. Combining traditional Australian techniques, inspiration from Europe and precision winemaking practices developed at Penfolds, Schubert made his first experimental wine in 1951. In 1957, Schubert was asked to show his efforts in Sydney to top management, invited wine identities and personal friends of the board. To his horror, the Grange experiment was universally disliked and Schubert was ordered to shut down the project. Max continued to craft his Grange vintages in secret, hiding three vintages '57, '58 and '59, in the depths of the cellars. Eventually, the Penfolds board ordered production of Grange to restart, just in time for the 1960 vintage. From then on, international acknowledgment and awards were bestowed on Grange, including the 1990 vintage of Grange, which was named Wine Spectator's Red Wine of the Year in 1995. Today, Grange's reputation as one of the world's most celebrated wines continues to grow. On its 50th birthday in 2001, Grange was listed as a South Australian heritage icon, while the 2008 Grange vintage achieved a perfect score of 100 points by two of the world's most influential wine magazines. With every new generation of Penfolds winemakers, Max Schubert's remarkable vision is nurtured and strengthened.

The Penfolds Bin 95 Grange Shiraz 2012 is a wine that truly embodies the reputation of Australia's most famous wine. With its deep color, this wine offers intense paneforte, dark chocolate and dark blackberry aromas, with lifted roasted chestnut, mocha, English-toffee aromas and notes of sweet tobacco, dried roses, shellac and frankincense. The wine is superbly concentrated, with wonderful presence, structure and density. It is plush in scale yet possessing lovely energy and structure, making it a truly transcendent and powerfully expressive Grange that harks back to Max Schubert's original blueprint. This wine is dense, expansive, rich and voluminous, with all elements in perfect symmetry. Its aromatic complexity, generosity and suppleness are reminiscent of the early 1960s, making it a wine that has to be in the pantheon of all-time great vintages. Unbelievably good to drink now, this wine is a great indication of its lasting quality, but it is recommended to leave it for a minimum of ten years if possible. This wine has a drinking window of 2026-2080.

Very deep, dark red colour with a tinge of purple and a hint of black. Black olive, creosote, savoury, vanilla, chocolate and mocha aromas, touches of smoked smallgoods. The palate is full-bodied but it''s not a blockbuster. Soft and fleshy, smooth and supple, already showing a glimpse of the excitement and fascination that will follow in its maturity. The finish is all harmony, despite the flood of tannin: soft, savoury, powdery tannin. The components are all in great harmony so that no one feature stands out. The wine''s balance and seamlessness are impressive. I sense this could be a top-level Grange, and may score another point when it's mature. - Huon Hooke, 98+ Points

A transcendent and powerfully expressive Grange harking back to Max Schubert's original blueprint... In 1829, Athanase de Villermont’s vast estate just outside the town of Äy provided the backdrop for the founding of an extraordinary Champagne house - but as an aristocrat, Athanese was forbidden from engaging in commercial trade. With the recruitment of Joseph “Jacques” Bollinger, a Champagne merchant, and Paul Renaudin, a Champernois fascinated by the world of wine, the Bollinger legacy began.

The Bollinger style is inimitable and recognised as such by great connoisseurs. It possesses a dense and subtle presence: a balance of the intensity of great Pinot Noirs and the freshness of Chardonnays from the Côte des Blancs. The house’s offerings are rooted in 5 tangible principles: the vineyards; Pinot Noir; magnums of reserve wines; the barrels, and time. Bollinger wines release a creamy effervescence resulting from vinifying in oak barrels and prolonged contact with the yeasts. Every tasting yields new delights that are guaranteed to transport you.

The Vineyard:
Bollinger has built its vineyards at the heart of the finest crus in Champagne. 180 hectares of vines are made up of 85% Grand and Premier crus and are farmed by our teams of growers across 7 separate vineyards: Aÿ, Avenay, Tauxières, Louvois and Verzenay for Pinot Noir; the Montagne de Reims, Cuis for Chardonnay; and the Côte des Blancs and Champvoisy for Meunier.

Another of Bollinger’s distinctive features are the two plots of Clos Saint-Jacques and Chaudes Terres. There, ungrafted vines are entirely tended by hand and reproduced using a form of layering called provignage, preserving the extraordinary heritage from which the Vieilles Vignes Françaises cuvée is produced.

Pinot Noir is the varietal on which Bollinger has staked its reputation. A demanding grape that requires care at every step, it remains front and centre because of the incomparable finesse it brings to a wine. Today, the Pinot Noir planted around the Montagne de Reims represents over 60% of the Bollinger vineyards. This also just happens to be the exact proportion it occupies in Special Cuvée! Multi-faceted and surprising, its unusually high ratio in the blends is a signature of the Bollinger style, to which it lends power, body and vinosity. It has been one of the founding principles of Champagne Bollinger’s identity from the very beginning.

Bollinger is guided by a responsibility anchored in time and a commitment to people, the earth and our roots. The company's success has been driven by a lineage of visionary winemakers who have pushed the development of the company to extraordinary, bold new heights. Mary Penfold's reign at the helm of Penfolds saw years of determination and endeavour, experimenting with new methods in wine production. In 1948, Max Schubert became the company's first Chief Winemaker and he propelled Penfolds onto the global stage with his experimentation of long-lasting wines - the creation of Penfolds Grange in the 1950s. Soon, the medals began flowing, and Grange quickly became one of the most revered wines around the world. In 2012, Penfolds released its most innovative project to date - 12 handcrafted ampoules of the rare 2004 Kalimna Block Cabernet Sauvignon. The Provence region offers the ideal growing conditions for the Grenache, Syrah and Cinsault grapes, which are the classic blend used to create AIX Rosé. With mineral-rich soils, 300 days of sun per year, and the cooling Mistral winds, these vineyards thrive in this picturesque setting. Maison Saint Aix is not only one of the largest domaines in the AOP Coteaux d'Aix-en-Provence appellation, but it is also one of the highest, sitting 420m above sea level. This elevation provides cooler nights and a greater Mistral effect, which helps dry the vines on dewy mornings, resulting in even better fruit. Over the past decade, the estate has undergone a complete transformation, with state-of-the-art equipment and modern winemaking techniques. From temperature-controlled stainless steel tanks to pneumatic presses and next-generation harvesting machinery, every step is taken to ensure the production of the highest quality rosé that only Provence can offer. The domaine's 50-60 year old Grenache vines guarantee the highest quality juice, while the fruit from the younger vines brings a refreshing element to the blend. To maintain the harmony of the land, a busy replanting schedule is in place, replacing up to 4 hectares of vines each year with new ones. In early September, the vineyards come alive with a whirlwind of activity from the break of dawn until noon. This dedicated effort guarantees the grapes' utmost freshness, the preservation of their delicate aromas and minimizes the risk of oxidation. It is through this meticulous process that AIX acquires its distinctive colour, delicate aromas, gentle acidity and impressive length. The symbol of the vines reaching towards the sky beautifully captures the enchantment of the land and the camaraderie of those who cherish it. It serves as a poignant reminder of the carefree days spent together under the warm sun and the abundance of shared meals, cherished moments and unforgettable memories that lie ahead. For Maison Saint Aix, this symbol is a daily affirmation of the simplicity and joy that life can offer when we choose not to complicate it. It is with immense pride that they prominently display this symbol on every bottle of their rosé, a privilege they are honoured to share.

Vineyard:
Provence is the birth place of Rosé for a reason. In fact it’s beautiful. Showy vanillin, coffeed, toasty oak is the first impression – as you’d expect of a Grange – though it’s neither syrupy nor malty. The big surprise with this release though is that it doesn’t have the bigness of tannin that some (or most) Grange releases boast. Is this a bad thing? In this case, no – because the balance of this 2005 is brilliant. So too is the dark fruit power motoring through the finish. Grange is renowned for its ‘formula’, but this vintage changes the tune according to the wants of the season – less muscle, more finesse. A vote for the craft of the winemakers involved. It’s persistent and seductive and awash with flavours of sweet, dense, meaty, smoky, leathery blackberry and blackcurrant. Today, Penfolds continues to hold dear the philosophies and legends that have driven the company's success since its establishment in 1844.

Penfold's Grange is Australia's most revered wine, and its creation represents a distillation of Max Schubert's ambition for Australian wine.

Penfolds Bin 95 Grange Shiraz is the benchmark by which all other reds in Australia and overseas are often measured. Revealing a saturated purple color, it’s seemingly more forward and seductive than past great vintages, which I suspect is due to the incredible purity of fruit as well as the wine’s flawless balance than any change in winemaking or stylistic shifts. I also think the acidity is healthy, and the 2015 tips the scales at 14.5% alcohol, which is certainly in the sweet spot, if not tame, for beautifully ripe Syrah these days. A blend of 98% Shiraz and 2% Cabernet Sauvignon that spent 20 months in new American oak hogsheads, it offers an extraordinary perfume of sweet crème de cassis, lead pencil shavings, camphor, Asian spices, liquorice, and wildflowers. This is followed by a full-bodied, powerful yet incredibly seamless and elegant Shiraz that has no hard edges, a big, dense mid-palate, ripe tannins, and a great finish. Coming close to rivalling the 1986, which has always been a benchmark vintage of Grange for me, the 2015 offers a more polished, elegant, approachable style. Vintage comparisons aside, this is a legendary example of Grange in the making. This is a wine made for those who truly appreciate both the art of winemaking and the beauty of life itself.
