Three decades later, while serving in the Second World War as a submarine lieutenant, Percy's grandson, Rolfe Mills, was struck by the vines growing on the schist slopes of the Douro Valley that reminded him of those back in Wanaka and, with that, a hunch was born. In 1975, Rolfe and his wife Lois began planting experimental vines and, in 1982 began the commercial planting of the 15ha that today comprise Rippon. Daniel himself recommends five years in bottle for the terroir to show the wine’s true sense of clarity and mineral nuance. From the best vintages, 15 years will not weary the Morgon cuvées. This is not to say they are not approachable as youngsters.\u003c\/p\u003e\n\u003cp\u003e\u003cspan style=\"font-weight: 400;\"\u003eHis wines are staunchly traditional, fermented with 100% whole bunches and then aged in predominantly large, neutral oak. His Morgons are his most sought-after cuveés. They come from vines around 60 years on on the sandy soils, as opposed to the schist-dominant portions of the famous slope. This is a pure, delicious example of one of the region's great crus.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp style=\"font-weight: 400;\"\u003eThis wine is the first of two cuvées that focus on Corcelette’s sandy, granitic soils. This soil generates wines of great perfume and finer, rounder tannins than those of Morgon’s more schist-influenced terroirs. Bouland separates his so-called ‘younger’ vines in this area (60 years on average so hardly young!) from his very oldest bush vines, which are bottled under the \u003cem\u003eVieilles Vignes\u003c\/em\u003e label.\u003c\/p\u003e\n\u003cp style=\"font-weight: 400;\"\u003eLike all Bouland’s wines, this fermented as whole bunches with indigenous yeasts, with the must foot trodden at the end to prolong the fermentation. Packed with silky red fruit, wet rock and a twist of inky reduction, and has a seamless structure that is already incredibly seductive. They allow the Farr Rising pinot noir fruit to sit in tank for two to three hours before bleeding free-run juice at a suitable colour for rosé production. This process concentrates the pinot ferment, but they also produce a barrel-fermented rosé. Natural barrel fermentation at cool temperatures is followed by full malolacitc fermentation.
