With more vineyards added both from family and from acquisitions in the last few years the total is now 7 hectares for Caroline. Her family holdings were roughly half for red wines and half for white wines, so Caroline has always been very comfortable vinifying red wines and is clearly adept with whites as well. For her own estate her holdings are about 35% Pinot Noir and 65% Chardonnay.

Caroline’s approach in the cellar shows a similar light touch as her husband using mostly 350 litre barrels with no more than 30% new and with no battonage for the white wines. Now settled into the new cellars and with 5 vintages released it is clear that Caroline has moved straight into the premier tier of producers in the Cote de Beaune as she has rapidly established her very small and very fine estate. There is an understated richness beneath the wine’s lively acidity, giving both charm and structure to the mid-palate. The finish is persistent and mineral-driven, carrying citrus freshness and refined chalky complexity. Sophisticated yet approachable, this Chassagne-Montrachet pairs beautifully with shellfish, roast chicken, creamy seafood dishes or soft-ripened cheeses.

Tasting Notes
NOSE
– Refined and mineral-laced
Aromas of lemon zest, pear and white peach layered with white flowers, crushed stone and subtle spice nuances.

PALATE
– Elegant and finely textured
Medium-bodied with bright acidity and delicate texture, showing citrus and orchard fruit balanced by saline minerality and restrained oak influence.

FINISH
– Long and precise
Persistent and refreshing with lingering citrus freshness, chalky minerality and subtle savoury complexity.

Reviews & Accolades
“Pale lemon and lime. Located just below Les Caillerets on the southern side of the village, Champs Gains is known for producing wines of finesse, tension and refined structure rather than overt richness. Caroline Morey’s careful and restrained winemaking approach allows the vineyard character to remain at the forefront, favouring precision, freshness and texture over excessive oak influence. Since establishing her domaine in 2014, Caroline Morey has earned widespread recognition for producing some of the Côte de Beaune’s most compelling modern white Burgundies. The 2023 vintage delivered ripe and healthy fruit balanced by vibrant natural acidity, resulting in wines with both generosity and energy.

In the glass, the wine reveals an elegant and layered profile built around citrus, white orchard fruit and saline minerality. The palate is precise and finely structured, with subtle oak integration contributing texture without overshadowing the vineyard’s natural tension. Notes of lemon zest, pear and white peach unfold alongside hints of crushed stone, toasted almond and delicate spice. There is a steely core running through the wine, supported by bright acidity and impressive persistence. The finish is long, refined and mineral-laced, carrying freshness and chalky precision well beyond the palate. Sophisticated and age-worthy, this Premier Cru Chardonnay pairs beautifully with lobster, turbot, scallops or refined poultry dishes in cream-based sauces.

Tasting Notes
NOSE
– Elegant and mineral-laced
Aromas of lemon zest, white peach and pear layered with white flowers, crushed stone and subtle roasted almond nuances.

PALATE
– Precise and finely structured
Medium-bodied with bright acidity and chalky tension, showing citrus and orchard fruit balanced by saline minerality and restrained oak influence.

FINISH
– Long and refined
Persistent and focused with lingering citrus freshness, mineral drive and delicate savoury complexity.

Reviews & Accolades
“A fine pale yellow.
